Home made sambal oeleck paste
After having tried the shop bought version of Sambal Oeleck paste, I wanted to try the authentic home made version.
This fragrant paste consists of fresh chillies, garlic, lemongrass, ginger all crushed up in a mortar and pestle. Then I added 1 tablespoon of fish sauce, a squeeze of lime juice and mix well.
I stored in a sterilised glass jar in the refrigerator for 1-2 weeks.
I actually liked my home made version more than the one I got in the supermarket and would certainly recommend that you try making your own. I used the pestle and mortar to pulverise my paste ingredients but you can easily blend all the wet and dry ingredients together in a blender or small food processor.
These paste mixes are really useful to have in the fridge since they can be used as a quick marinate for meat, fish and a small spoonful can be added to stir fried vegetables to give it that extra “kick”.
