I try not to buy snacks or sweet things to keep at home since this can be a huge temptation when I am feeling bored and peckish.
So when I have a craving for something sweet, I have to go out to the local supermarkets to make a specific purchase. Today, I was having one of those cravings. I thought about what I had in the food cupboards and the refrigerator and the following ingredients came into my mind- carnation and condensed milk, desiccated coconut, jams and Nutella spread.
I decided that I was going to make a version of Ferraro Rocher chocolate using the condensed milk, the coconut, and the Nutella spread.
This dessert only required minimal cooking and some finishing time in the fridge.
125 grams desiccated coconut
½ tin condensed milk
1 cup Nutella spread
1 tablespoon butter
For the syrup mix:-
2 tbs sugar (white or brown)
1 tbs water
Prepare syrup by boiling the sugar and water mixture for 1 few minutes until it achieved a honey or syrup consistency
On a low heat, add the butter to a saucepan, then toss in the desiccated coconut.
Cook for 3-4 minutes, stirring frequently so the coconut does not get too brown.
Add the condensed milk, stir in well
Remove from the heat and allow to cool to room temperature
Add the Nutella spread and mix thoroughly
Roll into small balls (about the size of Ferrero Rocher chocolate balls)
Roll the balls in some sugar syrup mix
Then roll in the desiccated coconut
Assemble in a container and store in the fridge
Ready to eat after an hour
I left mine to set in the fridge overnight and the coldness had seeped into the inside of the coconut Nutella chocolate mix. The intermingled coconut and chocolate combination was delicious, sweet and satisfied my sweets craving.
Try this simple and easy to prepare snack food. It is an excellent snack to have ready prepared in the fridge to use as a snack lunch box item for yourself and your children. We always have adult and kids visiting us daily and I like having something that I prepared myself that can be offered to our guests.
