If I am home during the morning and planning to spend the time doing some computing work or studies, I like to eat a home cooked, savoury breakfast that sets me up for the day. When I was younger growing up in Trinidad, a typical breakfast cooked my mum consisted of roti with some vegetables and perhaps  meat or fish from the previous day’s dinner. She still has this routine and I enjoy my mother’s home made breakfast when I am visiting during vacation time. Preparing a “Trini” breakfast makes me feel nostalgic for my mum’s comfort food.

When I woke up this morning, I wanted to eat a cooked breakfast but I had no appropriate vegetables in the kitchen. While drinking my early morning coffee brew, I thought about what I had in the kitchen cupboard that could be used to make something quick and savoury. I found a tin of tuna and my eggs.

Here is my quick and easy recipe to make this savoury, protein rich and tasty breakfast dish.


2 eggs

I tin tuna (I usually buy tin tuna in olive oil)

1/2 onion, chopped finely

1 chilli pepper

sprinkle of salt (adjust to personal taste/ preference)

Here’s how I cook it step by step:-

Into the frying pan, add the oil from the tuna, onions and chilli peppers and allow to cook for two minutes, stirring to allow the onions to cook through

Add the tuna to the pan and mix in well. Cook for 2 minutes


Break eggs in a bow, add a sprinkle of salt and whisk well
Add eggs to the tuna mix

Stir eggs to allow it to cook through for about 2 minutes, stirring regularly


Ready to eat

This dish can be eaten on its own as a nutritious low carb breakfast or with slices of bread if you desire. I had mine with roti (similar to pitta bread or chapati)
