Fish is a good source of protein, vitamin D and Omega-3 fatty acids, which are essential for heart and brain health. Today, I’m having some left over Nasi Gorang rice that I made late last night. I think it needs some complimentary saucy fish dish and I thought that the salmon in chilli black bean sauce would be just perfect.

I would also suggest eating it with plain boiled rice and some stir fried vegetables, boiled or steamed roots vegetables or even with some salad.

Ingredients

*Two pieces of fillet salmon

*1/2 teaspoon of olive oil/ frying oil

2 clove of crushed garlic

1 or 2 Bird’s eye chilli peppers or any types of fresh chillies available

1 tablespoon of black bean sauce

2 spring onions, julienned

1 teaspoon of fish sauce

2 tablespoon of Thai sweet chilli sauce

100 ml of water

Add the oil and the black bean sauce to the frying pan

Add the salmon and allow to fry

Add 2 teaspoon of sweet Thai chilli sauce and Thai fish sauce. These two sauces will balance out each other. No salt required since the fish sauce is salty.

Simmer in the gravy, add 100 ml of water and allow to simmer. Remove from the heat when sauce has the consistency of honey

Scoop out and put into the serving dish

Add spring onions and fish ready to be served

The whole cooking process only takes about ten minutes are full heat, quickly following the stages one after the other. The fish cooks quickly and is tender, tasty and full of flavor.
