My breakfast options in the past consisted of the following categories:

Fruit based smoothies

Roti and vegetables

Toasted bread and some sort of savoury filling

Toasted bread, butter and jam

Pastries

All of these options, minus the fruit based smoothies are made from white flour or wheat flour. I noticed recently that my tolerance level for these flour based products has fallen considerable. I grew up eating all those flour based food but now find that she trigger abdominal discomfort and pain. I feel that my breakfast options are now limited. I was speaking to a friend recently who is eating low carb diet and I asked her what breakfast ideas she suggested.

I also did some online research myself and I am now going to be trying to cut down some of those carbs that my body cannot tolerate.

My first day Breakfast ideas:

Spanish Omelette

Ingredients- 

Thinly sliced carrots, potatoes, onions and red peppers

*Two eggs

*Grated cheese

*Extra virgin olive oil for frying, ground black pepper and salt, dictated by the individual’s taste preferences. I like spicy so I tend to add fresh chilli peppers as well.

Spray the frying with the olive oil and add the potatoes

Add salt and black pepper to season and to individual taste. Let the potatoes fry for 5-10 minutes, stirring a few time to ensure that the potatoes do not stick to the pan

Add the red peppers and onion and cook for a minute

Whisk the two eggs in a bowl

Add the beaten eggs to the top of the mix and shake pan slightly to evenly spread out the whisk eggs

Cover the frying pan to allow the eggs to cook on a slow simmer for 1-2 minutes.
